Red Russian Kale
Here is one of my favorite recipes for Red Russian Kale. This dish work great as a bed to serve grilled chicken or steak on, or it also makes a great side dish.
Red Russian Kale
Garlic or Onion
Olive Oil
Seasoning (salt, pepper, and whatever else you might like)
Red wine
Peppers (optional)
Mushrooms (optional)
- Trim out the stem with a pair of scissors.
- Cut across the leaf, making 1" sections or strips.
- Saute' garlic and/or onion in olive oil on low heat, season with salt and pepper.
- Add peppers and mushrooms if you want. (mushrooms are superb in this dish!!)
- When onions/garlic is done i.e. translucent. Turn up heat to med/high and add 1/4 cup of red wine and the kale.
- Cover with tight fitting lid, and let cook 10 - 15 minutes, stirring occasionally.
- Remove from heat and serve.
Romaine Lettuce
A delicious way to serve Romaine lettuce.
Head of Romaine lettuce
Onion - any kind i.e red, yellow, white
olive oil
seasoning (salt, pepper, and you can add any of your other favorites too.)
- Wash and dry lettuce head.
- Take a cotton string and tie the lettuce together 3/4 from the end.
- Cut onion into chucks 1/2" - 1"
- cover both the Lettuce and onion with olive oil and season.
- Grill on med/high heat.
- You will want to turn the lettuce about 4 times, the outside will become charred. Turn the onions 2-3 times, they will also char a bit.
- When onions begin to fall apart, remove lettuce and onions from grill, chop into serving and eat immediately. This dish should be served hot!
You can eat it straight up or dress with your favorite salad dressing.
